Chris and I were invited to a wedding and it was really nice. The wedding luncheon was great, but everytime Chris and I see the picture of the dessert they served us we bust out laughing

Thai Peanut Salad
I Love this salad.....first of all because it's so colorful and healthy. It's a perfect summer meal.

Thai Peanut Noodle Salad
8 oz Linguine Fini (or regular linguine)
4 C shredded greens: any combo of napa cabbage, romaine lettuce or even spinach
2 C thinly sliced purple cabbage
1/2 red bell pepper, thinly sliced
1/2 yellow pepper, thinly sliced
1 medium carrot, julienned
1/2 medium cucumber, halved and sliced
1/4 of a red onion, thinly sliced
3 C diced grilled chicken
honey roasted peanuts (about 1/2 cup)

1 lime, juiced and zested
2 1/2 t sesame oil
1 T seasoned rice wine vinegar
2 T soy sauce
3 T honey
2 cloves garlic, roughly chopped
1 T minced ginger
1/2 C roughly chopped cilantro (stems and all)
1/2 C vegetable oil
1/4 t kosher salt*
2-3 t sriracha chili sauce*
2-4 T water*
1 lime, juiced and zested

Fun News to read
Jordan's letter this morning was fun to read about...he said "John Beck is now in the english ward that shares the building with our ward. He was looking for the english elders to give him a referral. I took the opportunity to talk to him about his mission (in Lisbon, Portugal) I told him about Ben going there and he got really excited. He said Ben will love it there. Then I got a picture with him of course. :)"

Enchiladas
- 1 lb ground beef
- 1/4 onion, chopped
- Seasonings for meat - S&P, garlic salt
- 8 ounces cream cheese, softened
- 2 cups enchilada sauce
- 1 can cream of chicken soup
- 8 ounces monterey jack cheese
- 12 flour tortillas, softened (6 inch)
Directions:

Brown beef, & onions in large skillet over medium-high heat until browned. Season

Turn off heat and add cream cheese. Stir until cream cheese has melted into mixture.

Mix enchilada sauce and cream soup in separate skillet until warm.Dip each tortilla individually into the enchilada sauce and add 1/4 cup spoonful of meat mixture and handful of cheese. Roll up and place in a greased 13x9 casserole dish. Place enchiladas seam side down in dish.

Top enchiladas with remaining 1 cup of enchilada sauce. Then top with cheese.
- Bake for 30 minutes at 350 degrees or until cheese is melted. Serve with shredded lettuce, salsa and sour cream. Also rice and beans.

This is The Place
Kaitlyn was so excited for her field trip.
We went to This Is The Place Heritage Park. It's a special place because when the kids were little we were "docents" (volunteers) up there.

The Kids loved the Handcart Pull and the story of the pioneer girl who tried to wear 3 dresses so that she could take them all across the plains with her. She left 2 dresses on the trail. The handcarts could only hold 1 extra change of clothes for each person.
It was a fun day and I'm glad I could spend it with Kaitlyn!

first was the train ride

We visited a Mountain Man and saw a beaver skin. The mountain men would trap beavers fur because they made excellent water proof hats. However, the "hatters" when they made the hats would use mercury and did not know it was slowly poisoning them and driving them crazy. They would literally go "mad". Thus the term "Mad Hatter" from Alice in Wonderland
Next was a trip to the place I remember visiting the most: ZCMI
for the candy.
I always chose the sour watermelon
The Last stop was the Deseret School. Wow those teachers were strict!

Meet Joe
We've known Joe for over 12 years now. The kids have all worked with him at church. Ben took him frequently to special needs mutual and to the gym. Now we are really lucky because Tyler has a new job. He is working with Joe several times a week and getting great experience and paid by the State of Utah.
Joe is always happy and we love him tons!
